The recently opened Six Over Coffee Co. in Monterey brews beans from Brandywine Coffee Roasters, hailing from the East Coast and regarded in the coffee industry for its fun and innovative co-fermented blends. Co-fermentation is the result of processing coffee beans with ingredients such as oranges, strawberries or even pink sparkling wine. At Six Over, the espresso served is in the style of Ethiopian or Colombian brews. But for co-owner TJ Ellis, serving Brandywine is a way to bring flavors from his home on the East Coast to the West. “I wanted to serve something different,” Ellis says. Originally from Baltimore, Ellis was introduced to the Wilmington, Delaware-based coffee roaster through a friend. The espresso served at Six Over is a rotating blend of different beans measured to work well with steamed milk. The aroma is nutty and a sip of the espresso on its own reflects a balance of acidity and bitterness, with floral notes thanks to the innovation of the blend. A secondary note of pine and jasmine coats the palate as the espresso naturally cools—if you manage to take your time to finish it. “It finishes more on the darker side,” Ellis explains, which he finds adds depth to coffee beverages. Ellis’ favorite is a flat white. The espresso is approachable, but not without complexity, suited to the simple vibes found in the open-floored layout of the coffee house.
