The introduction of icecooled freight cars soon after in 1923 meant lettuce could be refrigerated and kept stable for a much longer journey. By 1940, farmers in Monterey County planted 48,097 acres of lettuce worth a total land value of more than $3.6 million—double the value of the county’s former superstar sugar beet crop.
