It should be thick enough to hold a straw upright. On the other hand, while one may be encouraged to use a spoon, the shake must also be easy to sip. So there is a narrow target when it comes to consistency. Some people are tempted to start with a base syrup—or even a powder— to lend the desired richness or sweeten the mood. Parlors may even add flavoring, such as chocolate sauce, to enhance the experience. Yet ice cream and milk are all that are required for a memorable treat. The trick is to be easy on the blender and use good-quality ice cream. That’s where Colette’s in Pacific Grove comes in. Colette’s makes the ice cream in house. The coffee milk shake carries the toasted, bitter undertone of a fresh brew, softened by the luscious blend. One imagines a cold coffee drink, only plush and fun—this is, after all, a milkshake.
