It doesn’t take much—10 or 20 miles, perhaps—and the time for toddies and hot buttered rum is past. On Monterey Beach in April, however, a little evening warmth is still welcome. Fortunately, Tidewater, the new outdoor beachfront lounge, features the rich yet cozy rum cocktail. It’s a reminder of the holidays, with a comforting notion of cinnamon and other baking spices under a cushion of whipped cream. Each sip is scented with vanilla, and the spirit lends soft touches of caramel and banana, with hints of charred oak that complement the firepit setting. The drink starts with rum, of course. From there the recipe can vary, if only slightly—butter, brown sugar, spices. Some cut it with hot water. Others, including the team at Tidewater, cream butter with brown sugar and spices first, creating a batter. By taking this step, the rich butterfat drapes over the palate like fine cotton rather than a heavy blanket. Hot buttered rum is a traditional winter drink, mentioned in print as far back as the late 1500s and favored in colonial America. Spencer Tracy’s praise of the drink in the 1940 film Northwest Passage made a rough frontier tavern look inviting. But by a firepit at the beach on a still cool April evening—that’s pretty good, too.
