A modern classic—it joined the fold in 2008—the cocktail is too often lost among the frills of mixology. But it is one of the highlights of the drink menu at Seventh & Dolores Steakhouse in Carmel, where bartender Sam Maples appreciates the Paper Plane’s simplicity. The cocktail is composed of four ingredients in equal proportions. There is no need for house-made syrups or shrubs, not even a garnish. But the shaken marriage of bourbon, aperol, lemon juice and Amaro Nonino— Maples substitutes Foro Amaro to tamp the sweetness—is bright and balanced, easy to sip. “We love the Paper Plane,” he says, speaking for both his colleagues and patrons of the Seventh & Dolores bar. “It’s one of those perfect things.” Maples’ version invites the eyes with its appealing ruby hue. The cocktail is fruity, with a natural citrus sweetness that spars with the herbal bite of the liqueur. While it’s simple, the Paper Plane is not uncomplicated, offering teasing hints of blooming meadow flowers, vanilla, baking spices, even a notion of lightly scorched wood, all while pleasantly juicy. The original recipe was a play on the forgotten turn of the last century cocktail the Last Word. And perhaps that’s why the straightforward drink is seldom seen on menus—it’s ready made for mixology riffs. But, Maples reiterates, “I like the minimalism.” And he lands it.
