A description on the label takes us back. “In response to the vagaries of 2021 and the trials of the supply chain…” The producer of craft fruit ciders and fortified “ports” closed its tasting room during the pandemic, but owner Tim Calvert soldiered on, shipping bottles to local shops and restaurants— rolling with the punches, indeed. The 2021 sparkler is delicate on the nose, offering sensations of dried apple, scones and a gentle salinity that pops from frail streams of bubbles. Then it begins to announce itself with the bolder bouquet of ripe apples— although bold is a strong word. The sensation is not strident, just more pronounced than the initial introduction. The cider is dry and lean, with a bright acidity held in sway by the savor of apple peels. The fruit is soft and easygoing on the palate, and there is a whisper of minerality, of baked bread, as well as an earthy funk. Once again, the essence of fresh apple comes forward on the finish. It is an intricate sip, one divined from a winemaker-style touch with the fermenting fruit. Calvert allowed the juice to develop on its lees for 15 months, bringing a sense of balance without dampening the spirit of the fruit—a perfect acknowledgment of rolling with the punches.
