After all, the Manhattan, Old Fashioned, Mint Julep, Boulevardier—each are genteel and compelling. But the versatile spirit can show so much more. The team at Tarpy’s Roadhouse in Monterey present a selection of cocktails and specials that illustrate bourbon’s range. The Revolver is a play on the classic Manhattan introduced by a San Francisco bartender in the early 2000s. Calm yet spicy strokes of Bulleit Bourbon receive an aromatic jolt from coffee liqueur that follows on the palate with a harrowing streak of bitter dark roast roiling the pleasant sensation of maple and oak. The softer bite of citrus bitters brings the two together. While The Revolver sways three ingredients in a swarthy balance—a cocktail for a cool and cozy evening— Gulfstream is a brisk and rollicking affair. Again the drink takes advantage of the easygoing Bulleit Bourbon. Its nutty, spicy rye underscores the herbal citrusy bite of amaro and squirt of lemon, and the combination becomes a sharp, bright frolic. Notes of citrus and zest tap a bittersweet high that bring out the tingle of nutmeg in the bourbon. It’s fresh and nice, a cocktail not for the sweltering veranda of a mint julep, but for ocean breezes and blankets strewn on the sand.
