www.montereycountynow.com JUNE 13-19, 2024 MONTEREY COUNTY WEEKLY 35 CHILL To get into the minds of Joshua Perry and Felicia Gonzalez Acosta, the brains behind the bar at Cella, you have to ask seemingly impossible questions like: “Can you take a caprese salad and compress it into a glass?” The answer, of course, is yes. The Insalata features white whiskey—and the water of fresh cherry tomatoes and Thai basil cordial. This salad in a glass is perfectly clear, save for slivered cucumber on top of the giant ice cube. Elegance meets innovation regularly on Cella’s cocktail menu, and this season is no exception, as exemplified in the Day-Glo, Perry’s take on the Midori Sour. Try a taste of mass-produced Midori, technicolor green (thanks to artificial color), and it is candy sweet. Here, they make their own in a process that begins with freezing cantaloupe, honeydew and bitter melon to isolate the sweetest, still-liquidy juice. It’s mixed with spinach powder and spirulina for radiant green—no food coloring here—before a centrifuge blends it. The current menu takes classic concepts and does them from scratch. Cella’s spin on a dirty martini is the Night Visions, sochu with vermouth, topped with a slice of tomatillo and a shiso leaf. Their take on a gin-and-tonic is the Easy Peasy, featuring pea cordial and a load of greens and flowers decoratively heaped in the glass. “We want drinks that make you think: What’s in this?” Perry says.
