It’s one of the few places with a chill outdoor patio, for one thing. And the aromas of freshly baked scones and orange ricotta bread mingle into pure comfort. But Hestia is also known for its lattes. Barista and co-owner Sierra Stamps resisted the urge to promote a menu of house specialty coffee drinks. Since the shop opened in 2021, however, regulars have taken to her touch with flavored lattes. “The lavender latte has kind of become our flagship,” she says. No wonder. The lavender latte showcases a sweet and floral balance that lingers. It’s a simple presentation, with espresso and lavender syrup, as well as a thoughtful drip of vanilla—“Just to not let the lavender overpower,” Stamps says. Mother-daughter duo Kelly Green and Stamps joined their talents in baking and coffee for the venture. Green is a longtime home baker while Stamps honed her barista skills at coffee houses in Paso Robles. “We kind of put the two together and opened up,” Green says. The lattes gained notice in part because they are not over the top, even when Stamps is inspired by her mother’s holiday cookies to create a chocolate-gingerbread version. Stamps’ only trick is a careful attention to ratios, allowing the espresso to bring its character into play. Of course, there are other options at Hestia Cafe. “I actually just drink regular coffee every day,” Stamps says. Hestia, 320 Broadway St., Suite B, King City.
